Creative Thanksgiving Leftovers Part II- Turkey Pizza Casserole
Turkey Veggie Pizza Casserole
2 Large Zucchini, sliced
12-24 Pepperoni slices
2 Cups cubed chicken or turkey, pre-cooked
2 Cups Gluten Free Spaghetti Sauce or Tomato Sauce
1 Cup Mozzarella or Colby Jack Cheese, shredded
2 tsp. Basil
1/2 tsp. Garlic Powder
1 Tbsp. Ground Cumin
3/4 tsp. Salt (optional)
(blend all spices together to sprinkle over each layer)
2 Tbsp Olive Oil divided
*Prep Note: Toss Zucchini slices with olive oil in separate bowl prior to layering in dish.
Using a casserole dish, oil the bottom with olive oil. Begin by layering zucchini, spices, chicken, pepperoni, sauce, spices and cheese. Repeat the layering and end with topping of cheese. Layering the spices twice between each layer will help to incorporate the flavors. Bake in oven @ 350 for 40 minutes or until sauce and cheese are bubbling and melted.
