Sweet Potatoe Pancakes

Swwwweet Potato Pancakes

3 Egg Whites
1/3 Cup Bob's Red Mill GF All Purpose Flour
3/4 Cup Mashed Yams
1 Tsp Cinnamon
1/2 Tbsp Sugar (optional)
Organic Milk (just enough to create a thick batter consistency)
Mix well.  There is no need to stress if there are chunks of yams, it will still taste great, and the color is quite lovely.
In a skillet, add butter and pour the mix into the pan, cook 2 minutes and flip.  These are so fluffy and delicious.  Great for Breakfast, Lunch or Dinner.
